Tuna Tomato Salad

This is such a simple dish that my wife loves to put together as it is as healthy as it is tasty.


Serves: 2-3 people

Prep time: 15 mins

Cook time: 0 mins


1 canned tuna
2 large tomatoes - sliced
1 handful of black and/or green olives
1 red onion - peeled and sliced
2 tbsp extra virgin olive oil
2 tbsp balsamic vinegar
a pinch of salt
a pinch of black pepper
1 tbsp fresh parsley - chopped
sourdough bread (to serve)


1Drain the tuna and add to a large mixing bowl with the sliced tomatoes, olives, sliced red onion.

2Drizzle over the oil and the balsamic vinegar before adding a good pinch of salt and pepper to your taste.

3Give it all a good mix with some spoons to make sure all the ingredients are nice and mixed up together.

4Finally add the fresh parsely and serve with a couple of slicey of your favourite sourdough bread
